Assalamualaikum,
Minggu lepas saya memang teringin benar nak mencuba Choc Banana Cake seperti yang diilhamkan oleh SR. Saya mengambil kesempatan untuk membuat sambutan memotong kek belated harijadi anak yang ke 4 tahun dengan sanak saudara Ahad lepas.
Resipi kek ini saya dapat dari blog Resipi Diana. Biar saya kongsikan disini:
CHOCOLATE BANANA CAKE

Chocolate Sponge cake:
250 gm. Sponge Cake Mix
1 tsp. Vanilla essence
4 eggs
60 gm. water
80 gm. butter ( melted) / corn oil
Method for the sponge cake:
(1) Mix all ingredients together except melted butter and beat in high speed till thick and stands in a peak
(2) Fold in melted butter and pour in a greased and lined 9′ round tin. Bake for 50-60min at 180 celcius.
Chocolate mousse:
250 gm. Non-Dairy Whip Cream ( I used 260gm)
1 tsp. Vanilla essence
1 level Tablespoon of Gelatine powder - mix together with- 4 Tbsp. water and microwave for 20 secs
50 gm. Cocoa powder ) mix together
80 gm. icing sugar )
1 1/2 Tablespoon of Nescafe ) ( I think i would reduce to 1 tablespoon only in future)
1 1/2 Tablespoon of hot water ) mix together
Method for the mousse:
(1) Beat the whip cream.
(2) Mix all the ingredients together.
Chocolate Ganache
35 gm. cocoa powder
50 gm. sugar
150 gm. Dairy whipping cream
80 gm. chocolate - chopped
30 gm. Butter
Coating for the cake (Ganache) :
Put into a mixing bowl and double boil till mixture thickens.
Cool before pouring onto cake.
3 large ripe Del Monte Bananas - slice thickly (I used Pisang Berangan which bought my beloved hubby in Pasar Pagi)
Method to assemble the cake :-
(1) Spread 1/3 of the mousse on the first layer of sponge cake, lay the slice bananas on top and then top up with another layer or sponge, continue till the last layer of sponge is used up.
(2) Cover the whole cake with the balance mousse and keep in the refrigerator till the mousse sets.
(3) Pour the coating onto the cake and let the chocolate mixture flows down the side smoothly.
(4) Decorate the cake and put into the frige till coating sets.
(5) Slice with a warm knife and serve.

The baked sponge cakes sliced into 3 layers. I used the sharp and long cake knive.

Frost with choc mousse and lay the banana slice

Frost the whole cake with Choc Mousse then let it set in the refigerator

Pour cool Choc Ganache on the cake
